Meat balls in tomato salsa

A rich source of iron and super easy! Perfect to have prepped for the week :)

Serves 6-8
Ingredients:

  • 1 Kg of lean beef mince

  • 1 tsp of all spice

  • Salt and pepper

  • 1 egg

  • 750ml mutti sauce

  • 2 garlic cloves, sliced

  • 1/2 tsp sugar

  • 2 cups water

  • Handful of fresh basil

  • 1 tbs of dried oregano or mixed herbs

  • 1 Tbs olive oil

  • 125g of cooked basmati rice per serve

Method:

  • In a bowl combine lean mince, all spice, egg, onion, salt and pepper. Mix well with your hands to ensure all spices are mixed through.

  • In a large saucepan on medium heat, add olive oil and garlic. Stir until slightly browned. Add tomato salsa, water, basil and oregano. Reduce to low heat and leave uncovered. Add sugar to reduce acidity.

  • Meanwhile, roll meat ball into small balls with the palm of your hands. Place into sauce pan with tomato salsa. Cover the saucepan and cook for 30-40 minutes until sauce thickens and meat balls are cooked through. Occasionally stir to ensure meat balls are evenly cooked.

  • Serve with cooked basmati rice!
