Mixed Vegetables

These mixed vegetables make for a delicious side dish with meat, chicken or seafood, or as a beautiful warm salad with some leafy greens protein and brown rice or quinoa.

Ingredients

Pumpkin

Broccolini

Cherry tomatoes

Asparagus

Zucchini

Rosemary

Salt & pepper to taste

Extra virgin olive oil

Sage

Cinnamon

Slithered almonds

Sesame seeds

Fresh lemon juice

Thyme

Method

  1. Cut the pumpkin into large wedges and add extra virgin olive oil, salt, pepper, sage and cinnamon.

  2. Roast in the oven at 180˚C until soft and caramelised.

  3. Add extra virgin olive oil and salt & pepper to the broccolini and asparagus and add to the air fryer at 185˚C for 10-12 minutes OR pan sear until tender.

  4. Slice the zucchini lengthways.

  5. Add rosemary, olive oil and salt & pepper to the zucchini and pan sear until tender and golden.

  6. Add cherry tomatoes to the oven with olive oil and salt and roast until blistered.

  7. Top the vegetables with toasted slivered almonds, sesame seeds, thyme and fresh lemon juice.
