Salmon Frittata

Ingredients

150g Raw salmon fillet

12 Eggs

1/2 Cup of milk

2 Bunches of asparagus, chopped

1 Bunch of broccoli, chopped

2 Handfuls of parsley, chopped

Salt and pepper

Fresh thyme

1/2 Cup of mozzarella cheese

Method:

  1. Pre-heat oven to 180 degrees

  2. In a baking dish add chipped and frozen veggies to tray

  3. Chop salmon fillet into small pieces and distribute around tray

  4. Whisk in a bowl eggs and milk, season with salt and pepper. Add parsley, thyme and mix through

  5. Add egg mixture to tray with veggies

  6. Cook for 30 minutes at 180 degrees. At 30 minutes remove from oven and top with cheese

  7. Cook for a further 15 minutes or until golden brown

  8. Serve with your favourite side salad or greens

TIP: Use whatever vegetables you have available (fresh or frozen), the options are endless!
