Chicken, Mushroom & Pea Orzo

If you're looking for a quick, comforting dinner that’s both easy to make and packed with flavor, this Chicken, Mushroom & Pea Orzo is the perfect choice. Not only is it a one-pot wonder, but it’s also a meal that the whole family will love. Plus, it’s ready in under 30 minutes!

Ingredients:

  • 2 tbsp olive oil (or avocado oil)

  • 800g chicken breast, cubed

  • 1 small onion, diced

  • 3 cloves garlic, minced

  • 400g mushrooms, sliced

  • 2 cups of orzo

  • 5 cups chicken broth or vegetable stock

  • 1 cup frozen peas

  • ½ cup grated parmesan (optional or use dairy-free cheese)

  • 1 tbsp dried thyme and basil (or 1 tsp dried)

  • Salt and pepper to taste

Method:

1. Brown the Chicken:
Start by heating your oil in a large pot over medium heat. Add the cubed chicken and cook until browned on all sides. Once done, remove the chicken from the pot and set it aside.

2. Sauté the Veggies:
In the same pot, sauté the diced onion and minced garlic until fragrant and tender. Then, add the sliced mushrooms and cook until they soften and release their moisture.

3. Toast the Orzo:
Stir in the orzo and lightly toast it for a minute or two—this will add an extra depth of flavor to the dish.

4. Add the Broth & Simmer:
Pour in the chicken broth (or vegetable stock) and bring it to a boil. Once boiling, lower the heat and return the browned chicken to the pot. Add the frozen peas and let everything simmer for about 15 minutes, or until the orzo is tender. Be sure to stir occasionally so the orzo doesn’t stick to the bottom of the pot.

5. Finish with Herbs & Cheese:
Once the orzo is cooked through, add the dried thyme, basil, and a pinch of salt and pepper. Stir in the grated parmesan (or your dairy-free cheese) for an extra creamy finish.

Tip:

To make the meal even more balanced, serve it with a side of greens or a fresh salad. The crispness of a leafy salad complements the richness of the dish and adds a pop of colour to your plate.
