Prawn Poke Bowl
Here is number 3 of our favourite, go to summer salads!!
Ingredients:
Prawns (peeled and thawed) ~6-8
1 tsp of minced garlic
1 tsp of pesto (barilla)
Bean sprouts
1 Tb Shallots (finely diced)
1 x Handful of Leafy mix (Aldi kale slaw mix)
3-4 x Cherry tomatoes (halved)
¼ of an Avocado
1 tbsp of Beetroot hummus (obella)
¼ of a Lime and parsley (to garnish)
½ tsp of Olive Oil
Method:
Heat olive oil in a frypan on medium heat. Add prawns, garlic and 1 tsp of pesto. Stir fry for ~4-5 minutes or until cooked through.
While the prawns are cooking, prepare avocado, beetroot hummus, leafy mix, cherry tomatoes, bean sprouts and shallots on a plate.
Top it off with cooked prawns and garnish with lime and parsley, and salt and pepper to taste.
