Protein Pancakes
Ingredients
(serves 2: 6 pancakes)
100g spelt flour
1 scoop of vanilla protein powder
1 egg
1 tsp baking powder
1/4 tsp salt
1 1/2 cups of milk (almond)
1/2 tsp of cinnamon
Recommended Toppings
Maple syrup, cottage cheese with berries & jam (I used home made kumquat jam).
Method
Add dry ingredients to a bowl and mix through.
Add egg and milk then whisk.
To a hot pan, over medium heat, spray olive oil and add each pancake one at a time.
Let it cook for 2-3 minutes on each side, until golden brown.
Top with preferred toppings
