Protein Pancakes

Ingredients

(serves 2: 6 pancakes)

  • 100g spelt flour

  • 1 scoop of vanilla protein powder

  • 1 egg

  • 1 tsp baking powder

  • 1/4 tsp salt

  • 1 1/2 cups of milk (almond)

  • 1/2 tsp of cinnamon

Recommended Toppings

Maple syrup, cottage cheese with berries & jam (I used home made kumquat jam).

Method

  1. Add dry ingredients to a bowl and mix through.

  2. Add egg and milk then whisk.

  3. To a hot pan, over medium heat, spray olive oil and add each pancake one at a time.

  4. Let it cook for 2-3 minutes on each side, until golden brown.

  5. Top with preferred toppings
