Pumpkin Soup

Ingredients

  • 3 carrots, chopped

  • 1 onion, diced

  • 1 potato, chopped

  • 3 garlic cloves, minced

  • 2 tbsp extra virgin olive oil

  • 1.5kg butternut pumpkin, chopped

  • 1.5L water (add more if needed)

  • 1/4 tsp vegeta or use veggie stock instead of water

Method

  1. Heat olive oil and brown onions, add garlic and cook until you see some colour. Add in carrots, pumpkin and potato to caramelise.

  2. Add in water and vegeta and bring to boil.

  3. Once boiling, lower the heat and simmer for 20 minutes until the vegetables are fully cooked and soft.

  4. With a stick blender, blend the soup to create a velvety texture. Enjoy!
