Pumpkin Soup Recipe

Soup is regarded the quintessential winter food. Enjoying a bowl of soup may be a quick, easy and tasty way to add more nutrients to your diet.

Eating soup has many benefits. Soup can provide vitamins and minerals, while also keeping added fats and calories to a minimum, it helps to clear your sinuses, it contains a large amount of liquids which helps you stay hydrated and assists in building up your immune system. Additionally, eating soup is an easy way to increase your vegetable intake!

Recipe

Step 1: Brown 1tbs of extra virgin olive oil with 1/2 a chopped Kent pumpkin, 1x Onion, 1x Carrot and 1x Potato.

Step 2: Once slightly browned, top the pot up with enough water to cover the veggies.

Step 3: Bring to a boil and then simmer, until veggies are well cooked and softened.

Step 4: Using a hand blender…blend away!

Step 5: Season to taste. We recommend adding a pinch of Nutmeg.

Serve with your favourite crusty bread or just have as is :)
