Simple Edamame Pasta
Ingredients
(Serves 3-4)
500g chicken
1 tbsp garlic infused olive oil
3 x large mushrooms (roughly chopped)
2 x zucchinis (chopped)
Chopped fresh thyme
1 x packet of slender edamame
60g pesto
Salt & pepper for seasoning
Method
Marinate chicken in dish with garlic infused olive oil, salt, pepper and thyme.
In a pan over medium heat, cook chicken for 3-4 minutes on each side.
Drizzle one tbsp of olive oil in a pan over medium heat. Add mushrooms and zucchini into pan. Season with salt, pepper and thyme. Cook for 5 minutes or until browned.
Boil edamame noodles according to instructions on packet.
Once pasta is ready place in a bowl with pesto sauce, drizzle with olive oil and mix.
Once done place pasta, chicken and vegetables on a plate, serve with a fresh salad and enjoy!
