Simple Edamame Pasta

Ingredients

(Serves 3-4)

  • 500g chicken

  • 1 tbsp garlic infused olive oil

  • 3 x large mushrooms (roughly chopped)

  • 2 x zucchinis (chopped) 

  • Chopped fresh thyme

  • 1 x packet of slender edamame

  • 60g pesto

  • Salt & pepper for seasoning

Method 

  1. Marinate chicken in dish with garlic infused olive oil, salt, pepper and thyme. 

  2. In a pan over medium heat, cook chicken for 3-4 minutes on each side.

  3. Drizzle one tbsp of olive oil in a pan over medium heat. Add mushrooms and zucchini into pan. Season with salt, pepper and thyme. Cook for 5 minutes or until browned. 

  4. Boil edamame noodles according to instructions on packet.

  5. Once pasta is ready place in a bowl with pesto sauce, drizzle with olive oil and mix. 

  6. Once done place pasta, chicken and vegetables on a plate, serve with a fresh salad and enjoy!
