Sweet Potato and Lentil Salad

This salad is full of starchy carbohydrates, protein and healthy fats creating a satiating and delicious salad without requiring much preparation. Great for work or busy days.

Ingredients

  • 1 large sweet potato

  • 60g crumbled feta

  • ¼ cup Walnuts

  • Two handfuls of baby spinach

  • 6 cherry tomatoes, halved

  • Half a large tin of lentils

  • 2 tbsp olive oil

  • Salt and pepper

  • 1 tbsp lemon juice

Method

  1. Wash and chop sweet potato into chunks. Drizzle olive oil and season with salt and pepper. Bake sweet potato approx 30 minutes at 180 degrees or until softened. Allow to cool once cooked

  2. Drain lentils and rinse with water 

  3. Combine the spinach, tomatoes and lentils in a large bowl 

  4. Mix together the olive oil, salt and pepper and lemon juice in a cup and pour over salad.

  5. Add sweet potato, crumbled feta and walnuts on top of the salad.
