Mexican Style Stuffed Capsicum

Ingredients

  • 500g pre-cooked lean beef mince into tomato salsa

  • 1/2 cup of frozen corn

  • 1 large tine of 5 bean mix (washed and drained)

  • Old elpasso taco seasoning

  • 3 x capsicum (chopped half ways and seed removed)

  • 1/2 cup of shredded tasty cheese

Method

  1. In a pan, add frozen corn, mince, beans, taco seasoning and mix through.

  2. Line a baking dish with baking paper, place capsicum halves onto the tray. Add mince mixture to capsicums, top with shredded cheese.

  3. In a pre-heated oven, bake the capsicums at 150 degrees celsius for 40 minutes until capsicums are softened. For a more speedy process, cook on high and add cheese 5 minutes before serving to avoid burning.

  4. Serve with a crisp salad and fresh coriander.
