Pomegranate and Feta Salad

Ingredients

  • 1 bay cos lettuce (washed and separated)

  • 1 broccoli (cut into florettes)

  • 1/4 cup of pomegranate kernels

  • 50g of feta (crumbled)

  • 6-8 cherry tomatoes (halved)

  • 1 tbsp of olive oil

  • 1 tbsp of lemon juice

  • 1 tbsp of balsamic vinegar

  • Salt and pepper

Method

  1. Wash and chop up all ingredients separately on a chopping board

  2. Separate and spread cos lettuce leaves evenly around the bowl

  3. Fill the bowl with pomegranate kernels

  4. Top with cherry tomatoes, broccoli and crumbled feta

  5. Dress with olive oil, Lemmon juice and balsamic vinegar. Then season with salt and pepper.
