Tofu Curry

Ingredients

1 Tbs of sesame oil

1 Tbs of soy sauce

500g firm tofu

270ml ayam light coconut milk

1 cup of water

210 of green curry paste

3 cups of mixed veggies - snow peas- green beans- water chest nuts- cauliflower- broccoli

2 Handfuls of spinach

2-3 x chilli

1 x bunch of coriander

Vermicelli rice noodles

Method

  1. Cut tofu into bite-sized pieces, then toss together with soy sauce, sesame oil, and black pepper in a medium bowl.

  2. In a large skillet over medium-high heat, heat oil . Add tofu and let cook until golden on all sides, turning occasionally, 7 to 8 minutes. 

  3. Add curry paste and to tofu and coconut milk and water. Simmer for 10 minutes. Add vegetables and 2 handfuls of baby spinach, cook for 4-5 minutes or until slightly softened. 

  4. Meanwhile, prepare the noodles: cook rice noodles according instructions on the packet. 

  5. Add rice noodles, chilli and coriander to tofu curry.
