Turkey Kofta and Spiced Basmati Rice

Ingredients

KOFTAS:

  • 500g lean turkey mince

  • 1/2 medium onion, finely chopped

  • 1/2 cup finely chopped parsley

  • 1/2 tsp smoked paprika (sweet or hot)

  • 1/2 tsp cumin

  • Pinch of salt and pepper

SPICED BASMATI RICE:

  • 1 cup uncooked basmati rice

  • 1 tbsp olive oil

  • Bay leaf

  • 2 cups water or vegetable stock

  • 1/2 tsp cinnamon

  • 1/2 tsp allspice

  • Salt and pepper to taste

  • 1/4 cup pine nuts

  • 1/4 cup slivered nuts

Pre-prepared tzatziki to serve.

Method

  1. Soak the basmati rice for 30 minutes before cooking (if you have the time).

  2. Heat up oil in a pot and add bay leaf and rice and stock.

  3. Once cooked, remove bay leaf, add spices, salt and pepper. Add pine nuts and slivered nuts in a dry saucepan and toast until golden, add to rice.

  4. Prepare meat mixture in a large mixing bowel and add all ingredients.

  5. Mix well with your hands and shape into ‘long meatballs’.

  6. Heat up a nonstick pan and cook kofta until it has a nice char on the outside.

  7. Serve kofta on a bed of rice with a dollop of tzatziki and a side salad.
