Turkey Kofta and Spiced Basmati Rice
Ingredients
KOFTAS:
500g lean turkey mince
1/2 medium onion, finely chopped
1/2 cup finely chopped parsley
1/2 tsp smoked paprika (sweet or hot)
1/2 tsp cumin
Pinch of salt and pepper
SPICED BASMATI RICE:
1 cup uncooked basmati rice
1 tbsp olive oil
Bay leaf
2 cups water or vegetable stock
1/2 tsp cinnamon
1/2 tsp allspice
Salt and pepper to taste
1/4 cup pine nuts
1/4 cup slivered nuts
Pre-prepared tzatziki to serve.
Method
Soak the basmati rice for 30 minutes before cooking (if you have the time).
Heat up oil in a pot and add bay leaf and rice and stock.
Once cooked, remove bay leaf, add spices, salt and pepper. Add pine nuts and slivered nuts in a dry saucepan and toast until golden, add to rice.
Prepare meat mixture in a large mixing bowel and add all ingredients.
Mix well with your hands and shape into ‘long meatballs’.
Heat up a nonstick pan and cook kofta until it has a nice char on the outside.
Serve kofta on a bed of rice with a dollop of tzatziki and a side salad.
