Zucchini and Green Pea Fritters

Try this quick and easy plant based recipe as a meal or side.

Makes: 8 fritters

Ingredients

1 cup frozen peas

2 cups zucchini, pea sized dice (or grated)

1/4 teaspoon salt

1/2 cup flour (you may need to add extra)

1-2 teaspoons grated lemon zest

6 tablespoons aquafaba (liquid from canned or cooked chickpeas) or two eggs (slightly beaten)

2 tablespoons cooking oil

Optional toppings: Poached egg, avocado, ricotta, pepper, chilli

Method

  1. Dice the zucchini into pea-sized piece, put in a colander and stir in the salt. Let it sit for about 15 minutes, so that the water is released from the zucchini. Press as much water out as you can until the zucchini is only slightly moist.

  2. Boil the peas and set aside.

  3. In a medium sized bowl, combine the peas, zucchini, lemon zest, aquafaba or egg and flour.

  4. Heat a thin layer of oil in a heavy pan and then add about 1/3 a cup of batter. You can press the fritter together a bit but do not flatten it too much.

  5. Let the fritter cook for about 3 minutes or until you see the sides of the fritter starting to brown. Adjust heat/oil as necessary.

  6. Serve hot with your choice of toppings
