Ingredients

(serves 2)

  • 2 fresh salmon fillets

  • 1 tbsp garlic infused olive oil

  • 1 tbsp of Dukkah

  • 1 tb of pesto

  • 300grms of spinach

  • Salt & pepper

  • 1 radish (finely sliced) to serve

  • 1 lemon to garnish


Method


1. Heat half the oil in a pan - sauté spinach with pesto (cook until spinach is wilted).
2. Coat salmon in dukkah.
3. Heat the rest of the oil in a pan to cook the salmon (cook until the salmon is fully cooked through or to your preferred liking!).
